God of War Collection Difficulty Level?

Hey Ive never played any of the GoW games but im really excited about 3. I planning on buying the Collectors edition thats coming out next week (GoW 1&2) for my PS3. I just wanted to know about the difficulty of the game, is it too easy? from the vids. that ive seen you can just go around trowing your swords and not get hit. please tell me this is not the case.
